  • Adapted from Cherry Almond Quinoa Breakfast cookies as seen on Peanut Butter and Julie
  • printable recipe
  • 1 stick unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 3 tablespoons agave nectar
  • 2 large eggs
  • 2 medium extra ripe bananas, mashed
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon coconut extract
  • 1 cup cooked and cooled quinoa
  • 1 cup white whole wheat flour
  • 1 cup whole wheat pastry flour
  • 1/2 cup ground flax meal
  • 1 cup regular rolled oats (not quick oats)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1 cup dried apricots, chopped
  • 1 cup roasted unsalted whole cashews, chopped
  • Icing:
  • 1 square of white melting chocolate
  • 1 tablespoon half and half
  • 1/2 teaspoon coconut extract

    Yowza! This is just the perfect Breakfast Cookie. Of course, when I made my (small) batch I ate mine at midnight ... well, it IS a cookie, isn't it? The flavors are delicate without being whimpy. And, me not being a real 'breakfast person,' I simply love this. It's delicious, filling, and keeps my engine running properly. Thank you for sharing.
