  • nonstick cooking spray
  • 1 c. sugar
  • 1/4 tsp salt
  • 1 tsp grnd ginger
  • 1/2 tsp grnd cinnamon
  • 1/2 tsp grnd cloves
  • 1/2 c. canola oil
  • 1/2 c. applesauce
  • 1/2 c. light molasses
  • 2 tsp baking soda
  • 1 c. boiling water
  • 2 c. all-purpose flour
  • 1/2 c. whole wheat flour
  • 1 lrg egg beaten PLUS
  • 1/4 c. Egg Beaters 99% egg substitute or possibly 2 large Large eggs Lemon Ginger Sauce see recipe

  1. Preheat the oven to 350F Coat a 9 X 13-inch cake pan with nonstick spray; set aside.
  2. In a medium bowl, combine the sugar, salt, ginger, cinnamon, and cloves.
  3. Stir in the oil, applesauce, and molasses; blend well. Combine the baking soda and boiling water in another bowl and immediately stir into the molasses mix. Add in the flours gradually stirring to prevent lumping.
  4. Add in the Large eggs, then pour the mix into the prepared pan. Don't over mix.
  5. Bake for 40 to 45 min, or possibly till a toothpick inserted in the center of the cake comes out clean and the cake starts to pull away from the sides of the pan. Place the pan on a wire rack to cold. Just before serving, make the Lemon Ginger Sauce.
  6. NOTES : Serve squares of the cake warm with lemon sauce which's textured with chunks of crystallized ginger. To produce the best texture, be careful not to overmix the batter. Reducing tips: Replace up to half of the oil with applesauce.
  7. Here then is a traditional ginger cake - looks like it makes around 5 c. of batter. and crystallized ginger makes the sauce special.
