White button mushrooms are one of the most economical and easy way to add extra nutrients to our diet. A goldmine of various minerals and vitamins, these could be adopted in our cooking easily in the form of many delicious & delectable dishes.

Since mushrooms have no roots, flowers or fruits and can not be classified as a veggie, many people avoid it altogether. Mushrooms are a form of edible fungus and are found naturally in the wild or are cultivated manually using spores. Mushrooms are an excellent source of selenium, riboflavin, copper, potassium, zinc and is a powerful antioxidant.

The following is an easy to make mushroom recipe which can be adopted for making rolls and sandwiches.

1. Mushroom as an accompaniment

Ingredients;

Method: Select white and firm mushrooms and discard any limp or brown color ones. Wash each button mushroom them in running water thoroughly. Slice it thinly and keep aside.

Peel and dice the onion in fine pieces. Dice tomato and green chilly. Make a paste of 1′ ginger and 4 garlic pearls.

Dry roast the groundnuts and make a coarse powder of it.

Heat oil and splutter the mustard seeds in it. Add sliced onion and fry it for a minute. Add the diced tomatoes, green chilly and ginger-garlic paste and fry for another 2 minutes.

Add rest of the dry powders and cook for 1 more minute.

Finally add the diced mushrooms and cook on high heat for 5 minutes. Reduce the heat and cook for 2 more minutes. Take off the flame and sprinkle the fresh coriander and the roasted groundnut powder on it.

2. Mushroom Rolls

Ingredients;

Method: Make the chapatti as shown in here. Keep the prepared chapatti on a plate and put the mushroom dish in one corner of it.

Roll the chapatti and make a firm wrap. Cover the prepared mushroom roll with a silver foil.

Pack this delicious and healthy roll in your kids lunchbox.

3. Mushroom Sandwich

Ingredients;

2 Bread slices

2 tbsp. of prepared mushroom

2 tsp. of Tomato Ketchup

1 tsp. of butter

Method: Spread the butter on one slice and tomato ketchup on the other. Put 2 tbsp. of prepared mushrooms on the buttered slice and cover it with the other slice. Secure it with a silver foil and pack it as a healthy lunchbox for kids or adults.

Note;

Mushrooms will release water, therefore cook for extra 5 minutes to let the water dry before wrapping it inside the rolls. Else it will make the mushroom roll soggy after some time.

A healthy lunch box for kids.

Select white and firm button mushrooms for better results.

The groundnut powder gives a crunchy taste to the recipe.
